Trout Crusted with Acacia Honey from Piedmont and Lombardy(Serves: 4)
Trout Crusted
Ingredients :
4 small trout
Extra-virgin olive oil
Fresh rosemary leaves
Fresh thyme leaves
2 to 3 cloves garlic
1 lemon, thinly sliced
Salt and pepper, to taste
4 Tbsp acacia honey
4 Tbsp dry white wine
4 Tbsp brandy
7 oz sliced almonds

• Wash the trout; slice in half, remove bones and trim into 2 fillets.
• Preheat the oven to 350°F. Line a baking dish with parchment paper; lightly oil paper. Sprinkle the herbs, garlic and lemon into the dish, then place the trout fillets on top.
• Season the fish with salt and pepper and top with the honey. Drizzle with a few drops of olive oil, the wine and the brandy.
• Transfer the baking dish to the oven and bake 15 minutes. Remove from the oven and top with almonds; return to the oven for 10 minutes, or until almonds are golden.
